アカザカズラ(ツルドクダミ科)の塊根, アメリカサトイモ(サトイモ科)の塊茎, およびショクヨウカンナ(カンナ科)の塊茎から澱粉を抽出精製した.澱粉の収率はそれぞれの生組織に対し, 約10,13,および15%であった.2.各澱粉について, 水分, 蛋白質およびリンの分析, 顕微鏡観察, 粒径分布, X線回折, ヨウ素呈色, 生澱粉のグルコアミラーゼによる消化, 膨潤力, 溶解度, アミログラフィーなどの諸項目につき測定し, それぞれの澱粉の特性を考察した.3.アカザカズラ澱粉は, 粒の形に変化が多い点がきわめて興味深い.また糊化膨潤しやすく, アミログラムの最高粘度も高かった.アメリカサトイモ澱粉は小粒でアミロース含量が低いが, 膨潤力や溶解度, 結晶形などはサツマイモ澱粉に近かった.またショクヨウカンナ澱粉はきわめて大形の粒で, アミロース含量がやや高く,
