However, almost all of the consumption is used in the drying and smoking processes for Katsuobushi production in the southern Satsuma peninsula. This study investigated firewood consumption in the pizza-making process at restaurants and their production. We interviewed nine pizza restaurants in Kagoshima prefecture for firewood consumption research and two suppliers for firewood production. The results showed 137 tons of firewood was used annually at the nine pizza restaurants.
