ホウレン草をモデル野菜として試みる第一歩として, ミネラル含量およびその調理による消失率について検討した.鹿児島県内の有機栽培農家から得たホウレン草のMg含量は, スーパー等で得た有機栽培と明記されていない鹿児島県産のホウレン草より有意に低かった.Ca, KおよびP含量は, 両ホウレン草間に有意差はなかった.実験的に化学肥料のみ, 家畜ふん堆肥のみでホウレン草を栽培したところ, 牛ふん堆肥で栽培したとき最も成育が良かった.化学肥料のみで栽培したホウレン草に比べて, 牛ふん堆肥のみ, 豚ぷん堆肥のみおよび鶏ふん堆肥のみで栽培したホウレン草のMg含量が低かった.また, Ca含量も低かったが, KおよびP含量は高かった.調理(100℃, 3分間熱湯中で煮沸)によるMgの消失率は, 家畜ふん堆肥で栽培したホウレン草で低かった.また,
