Studies on the autoxidation of fatty materials have revealed the\nfacts that the primary products of autoxidation are the peroxide or hydroperoxide (PV),\nand that by the transformation or decomposition of the peroxide and the interaction of\nthe peroxide with other materials of autoxidation and further oxidation of the peroxide,\nthe secondary products may be formed, including various aldehydes, ketons and acids\netc., some of which are responsible for rancid flavour and ordor. However, there has\nbeen probably little experimental evidence about the mechanism by which the lower\nproducts are formed.\nAnd then, in order to obtain some information on the process of the formation of\nlower carbonyl compounds by the oxidation, a preliminary experiment was carried out in\nconsidering the relationship between the formation of water-soluble carbonyl compounds\n(SC) and the quantity of the peroxide and between the formation of water-soluble\nand non-water-soluble carbonyl compounds (NC), adopting the oxidative action of\nsoybean lipoxidase for linoleic acid.","subitem_description_language":"en","subitem_description_type":"Other"},{"subitem_description":"The formation of SC by the enzymatic oxidation of linoleic acid could hardly be\nperceived under the presence of smaller quantity of PV, while that of TC was appreciable\nin the same case. The addition of NC fraction to the mixture resulted in the acceleration\nof SC-formation and the inhibition of PV-formation. By some variations of the substrate\nconcentration, the rate of PV-formation was considerably affected, while that of SC\nwas hardly affected.
