{"created":"2023-07-25T08:08:31.539494+00:00","id":7929,"links":{},"metadata":{"_buckets":{"deposit":"6186a613-15f9-49f6-a5f7-226e722bbe05"},"_deposit":{"created_by":18,"id":"7929","owners":[18],"pid":{"revision_id":0,"type":"depid","value":"7929"},"status":"published"},"_oai":{"id":"oai:ir.kagoshima-u.ac.jp:00007929","sets":["70:72"]},"author_link":["126550"],"item_5_date_6":{"attribute_name":"作成日","attribute_value_mlt":[{"subitem_date_issued_datetime":"2012-03-16","subitem_date_issued_type":"Issued"}]},"item_5_date_granted_54":{"attribute_name":"学位授与年月日 ","attribute_value_mlt":[{"subitem_dategranted":"2012-03-16"}]},"item_5_degree_grantor_53":{"attribute_name":"学位授与機関","attribute_value_mlt":[{"subitem_degreegrantor":[{"subitem_degreegrantor_language":"ja","subitem_degreegrantor_name":"鹿児島大学"}],"subitem_degreegrantor_identifier":[{"subitem_degreegrantor_identifier_name":"17701","subitem_degreegrantor_identifier_scheme":"kakenhi"}]}]},"item_5_degree_name_42":{"attribute_name":"学位名","attribute_value_mlt":[{"subitem_degreename":"博士(水産学)","subitem_degreename_language":"ja"},{"subitem_degreename":"Doctor of Philosophy in Fisheries Science","subitem_degreename_language":"en"}]},"item_5_description_17":{"attribute_name":"ファイル（説明）","attribute_value_mlt":[{"subitem_description":"博士論文全文","subitem_description_language":"ja","subitem_description_type":"Other"}]},"item_5_description_4":{"attribute_name":"要約(Abstract)","attribute_value_mlt":[{"subitem_description":"近年，簡便化を志向した高次加工食品の消費が拡大している。こうした加工化の進展は，原料化されざるを得ない既存食品の需給構造や産地形成に大きな変化をもたらしているのではないか。現代的な食品の全体的需給を理解しその将来を展望するためには，こうした新しい食品加工産業の展開とその影響を明らかにする必要があろう。本研究では上記の問題意識に接近するために，簡便化食品市場拡大の経緯を明らかにした上で，当該市場における食品加工企業の行動実態並びに原料化される既存食品の需給構造変化さらには原料産地の構造再編状況をフードシステムの観点から明らかにすること，を研究の目的とした。研究対象は，伝統的食品産業でありながら，近年では簡便化食品への原料供給機能を拡大させている節加工産業とする。またフードシステムの観点から変化の様相を捉え，そこにおける具体的な企業行動について焦点を当てた分析を行った。本研究では以下のことを明らかとした。第一に，簡便化トレンドの進展と共に，節加工産業ではめんつゆなどの大衆的簡便化食品が生産されるようになったが，ここに大手食品企業が参入した。これらの企業は新製品を開発し大量販売することによって当該市場をさらに拡大した。その結果めんつゆ市場は大きく成長すると同時に，少数の大企業によって寡占化された市場となった。 \n 第二に，めんつゆ市場が拡大するにつれて原料節の調達規模も大量となった。またその原料節に対しては大量性，安定性，規格性などが強く要求されるようになった。その結果，大規模な節製造企業が選別され，大手食品企業と固定的，継続的な取引関係が構築された。大手食品企業の商品開発や企業間競争上の要請によって，節製造現場が大きく左右される状況となっている。第三に，節製品の加工原料としての需給調整や中間的加工を行う存在として，「だしメーカー」という新しい業態が節加工産業のフードシステム上に出現した。「だしメーカー」は全国の節産地から原料節を集約的に調達し，中間的加工を施して汎用パーツ化し，大手食品企業の注文に応じて供給する役割を担っている。大規模節製造企業は実際にはこうした「だしメーカー」のイニシアチブの下で，そこで必要とされる原料節を大量供給することが求められている。その結果，こうした大規模節製造企業では生産の自立性が低下しつつあるが，伝統的節製造企業が衰退するのと対照的に，新規投資と大量生産によって業容をさらに拡大し成長を続けている。このように，本研究では簡便化食品市場の拡大とそこにおける活発かつ合理的な企業行動が，伝統的な節加工産地の構造再編を大きく進めているメカニズムを明らかにした。拡大する簡便化志向を背景とした食品加工産業の現代的展開は，既存のフードシステムを大きく変化させるインパクトを有するものである。 \n\n連合農学研究科博士論文(水産学) ;
