| 内容記述 | Rates of activation of crude protease contained in skipjack muscle was measured at -10 and -20°C. The results showed that the activation rate of the protease increased at low temperature in early period of storage. If the distinguished increases on activation rate described in the manuscript are due to the freezing of protease, such behavior of the enzyme may give important suggestion on the storage technology of the frozen skipjack. | |||||
