内容記述 In this paper authors explained the chemical changes of Katsuwobushi by Aspergillus spieces. 1) Excepting the fat decreasing, notable changes were not recognized in general constituent. 2) In the free amino acid in Katsuwobushi, in spite of decreasing the mono amino acid and lysine, acidic amino acids, glycine proline, and serine were increased by these organisms.
